Um, incase you haven’t noticed, I’m obsessed with mini graham cracker crusts.

I’ll take pretty much any excuse to eat them.

Coconut Cream Pie Day? Check. Apple Pie Day? Check. Oh their own? Duh. Strawberry Rhubarb Pie Day? Check.

There are several advantages to the mini crusts: a) they are delicious, b) you don’t have to go through the long, tedious process of crafting your own pie crust, c) they are the the perfect single serving size, and d) they are delicious.

I had never had rhubarb before today and boyyyy is it tart!

To make these simple little pies, I mixed together chopped up rhubarb and strawberries, put it inside a pie crust and topped it with some greek yogurt. The yogurt really helped the pucker factor!

I have some leftover filling and I’m thinking about putting them in my breakfast smoothie tomorrow morning. We’ll see how that turns out!
