Quinoa Salad = Yum
One reason I dislike winter (besides abnormal frigidity) is the distinct lack of sunshine.
Seriously, I am dreading the day that it is dark when I leave work at 5pm. I happen to sit in an office devoid of windows, so the only sunshine I’ll be able to see is if I happen to escape for a few brief moments, soaking up the last wisps of vitamin D. Also, lack of sunlight makes for bad food blogger pictures.
I had to make dinner super fast after work today before the light disappeared, which left me running in the semi-dark. I think it might be time to re-evaluate my routine. Especially if I want to get food pictures on here!

I think one thing I’m going to do every day for the month of November (why do men always get to have all the fun?) is play Wii Fit. Every day. I really got into the step game today. I’m already on my way!

Dinner tonight was spectacular. I really, truly love quinoa. It is so tasty, so delicious, so easy, so wonderful. Quinoa salads come together super quick (the slowest part was cooking the quinoa) and it will feed me for days.

In here:
- 3/4 c Quinoa
- 1 hothouse cucumber, cubed
- handful of cherry tomatoes, halved
- 1 c chopped spinach leaves
- 1/2 c chopped mint leaves
- 1/2 can chickpeas
- sprinkling of feta cheese
Dressing:
- 1/8c apple cider vinegar
- 1 tsp paprika
- 1/4 c olive oil
- juice of one small orange
- a bit of orange zest
Cook the quinoa. Cut/chop/mice/make everything into small pieces. Whisk together all of the dressing ingredients. Throw all chopped ingredients into a large bowl. Pour dressing over. Mix. Eat.

Your kitchen will be a mess. Turn on a movie and clean it. Then snuggle in your bed.
