Ah, the return of the McRib.
The McRib is something that brings me back to my childhood. It reminds me of my Mom, because we both share a love for this precious treat. I passed by a McDonald’s a few days ago, the flashing sign indicating that the McRib was inside, waiting to be devoured. I was tempted. Then I remembered that McDonald’s is mostly disgusting and I could make that McRib myself. Into the kitchen I went.
Did you know that it is nearly impossible to find a barbecue sauce without HFCS in it? I ended up getting some reduced calorie kind, because it was seriously the only one I could find without HFCS. It tasted just fine though, I wouldn’t have been able to tell the difference in a blind taste test. Saving calories and my body from HFCS? I’ll take it.
Need:
1/4 block tempeh
4 tbsp barbecue sauce, divided
1 pickle, chopped
1/4 c chopped onion
1 sandwich thin
Do:
Cut tempeh into small blocks. Chop onion and pickle.
Marinate tempeh in 2 tbsp barbecue sauce for as long as your heart desires.
Cook tempeh in a skillet until it starts to get crispy.
Top one half of the sandwich thin with pickles, onion and tempeh.
Spread the other 2 tbsp barbecue sauce on the other half of the sandwich thin.
Put the two halves together to make a whole. DELICIOUS.

This version was (dare I say it?) even better than the real thing. Who said everything McDonalds is bad?
>Oh my, that sounds wonderful. I've only ever had tempeh at Mellow Mushroom. I guess I'm scared to make it myself, but I think I might have to to try this!
