Monday Thoughts on Running
Is it too early for peppermint bark? It seems like everyone is too busy shoveling pumpkin and squash into their mouths to realize that peppermint and candy canes are next.
Anyway, I believe the answer to that question is no. Mostly because I made some this weekend. It was good, but I think there was too much white chocolate. Also, we used some mints I just had lying around instead of candy canes. The bite of the peppermint wasn’t as sharp as I would have liked it. But still, delicious.
Today turned out to be a pretty decent Monday. After my semi-productive workday, I ran 3.5 miles downtown. I ran the course that will be my 5k, plus a little extra because I got a bit lost for a minute or five. The course is going to be challenging, mostly because I psych myself out when it comes to hills. I know I’m ready for this race and I’m going to finish strong. I think my sister Jenny and I are going to run a 5k on Thanksgiving. I need to burn off all that vegetarian goodness I am going to overindulge in somehow.
I’ve made a goal for the next year or so. In one year, I want to run a half marathon. I know it’s completely doable if I stick with it. The problem is that I will run every day for a month and then quit for 6 months. Repeat pattern. I think I’m just going to keep signing up for events to keep me motivated. This past April I was in Charleston for the Cooper River Bridge Run. I’d like to do it in 2011. I should just go and sign up for it so I can’t back out. That’s the thing with signing up for races. Once I pay for them, I actually train for and complete them. My best friend Mary Helen and I were talking about doing a 5k together early next year. She’s pregnant with a precious baby boy and misses running. So that’s the plan. 5k’s on Thanksgiving, early 2011 and Cooper River Bridge Run in April. Maybe a few other races here and there.
Yesterday I made so many delicious things, including Baked Apple Tempeh, Pea Soup, and Baked Apples. It was a pretty delightful Sunday. I still have a ton of apples to use from when Patrick and I went apple picking. I also went food shopping and saw where the new Trader Joe’s will be! So excited for their opening this Friday!


>Hey! Why did this thing delete my comment?! But yes we are going to run the whole Thanksgiving 5k & DOMINATE!!! The Cooper Bridge is a 10k, yes? That's a good next step. If you want to do a 1/2, you should do the Nashville one. It's a good beginnger race because it's a lot of fun and the course is pretty flat. I'm thinking about doing the 1/2 or the full in April. We should run together!!!

And thankfully for me, Nate hates peppermint so it can be alllll miinnnneee lol I'm also starving after reading about all the yummy things you made this weekend.
